Halloween is our probably our all time favorite holiday. One reason is because it’s also Bubby’s birthday and we just love fall in general. I also love the thought behind Christmas, but, I don’t like all the hype and what not that comes with it. Halloween is more fun, light hearted and not stressful! We can all use less stress in our lives, right?
So grab the kids this fall and a few ingredients to recreate these Halloween Inspired Cake Balls. And while you are at it, you may be inspired to create a few of our other Halloween Treats:
Ingredients
1 1/2 C of funfetti cake mix
1/2 C unsalted sweet cream butter, softened
1/4 C sugar
1/2 C flour
1/2 TBSP vanilla
1/2 C + more for decoration halloween confetti sprinkles
2 Bags of Ghiradelli white melting chocolate
1 Cookie sheet fitted with wax, or parchment paper
Directions
In a large mixing bowl, add the cake mix, sugar, flour and vanilla.
Cut the butter into cubes and add into the same bowl using a fork or your fingers, work the mixture into a cookie dough texture.
Add the Halloween sprinkles and mix until combined.
Using a small cookie scooper, scoop some dough and using your hands, roll into balls repeat steps until all dough is gone.
Using a double boiler, melt the white chocolate.
Dip the dough ball into the chocolate. If you are finding the dough to be to soft, place in freezer for 10 minutes to harden and easier to work with.
Using a fork, completely coat the ball into the chocolate and place onto the cookie sheet repeat the previous step with the remaining dough balls
Sprinkle top with sprinkles and place into the fridge for 15 minutes.
